The third picture is actually a board specially designed to keep your blades sharp. It's called Hydroma HY72 by Röchling. Peter posted a photo of it as well. It's an industrial supplier in Germany and unfortunately they don't sell directly to end-customers.
However, I used my employers contacts to get a quote and it's 45€ per board (60 cm by 40 cm in 2,5 cm thickness). I want to buy one, but the have a minimum order amount of 150€.
So - Anyone wanna chip in?I will also post this a separate blog post.
The second dark and square plate looks like a machinists' granite surface plate. They come in 2" and 3" thickness and a variety of sizes. I believe machinists use them to calibrate tools because the granite is exceptionally level. If you're in the US, you can get them for a reasonable price at the global behemoth based in Seattle.
I use granite with rounded light edges, you can find very easily with a marble worker for funeral. It will make your dimensions and polish, but just without other finishes
Hi Malik, those would be some kind of granite or stone. I got mine as remnants from a kitchen countertop installer. You can also get them from tool sellers--machinists use them. On Amazon they're called granite surface plates. Some leather tool suppliers also sell them but may be expensive to ship due to the weight.

You can also get a free piece of granite from places that make granite countertops. They often have scrap or extra pieces laying around.

The black one looks like marble or granite, and should be easier to find than the beige one, which is a lithostone.
